For those of us who carry packs, it serves as our grab and forget emergency tool as well as our pack for carrying what is needed for the current ride. It's a good idea to check our grab bag annually to ensure that it still covers our needs and that all equipment is in good order and that all consumables / perishables are up to date. Nothing worse than finding that the expected item is not functional.
So, thanks to a push from @Nachum & @Ari, here's what's in my bag:

alcogel wipes (from long before COVID) - important for any repair or 1st aid
sport beans - amazing pickup in an emergency

bag with tissues - the bag is just as important for packing it out in an emergency. I don't have - but wipes are great - let them dry out & then just moisten with water when needed

frame mounted hand-pump is clutch (and the battery never dies)
small battery powered emergency pump - clutch for quickly inflating tire & may get you out of a jam if the tubeless tire pops off the bead...you'll be hard-pressed to reseat with a hand-pump
CO2 inflator - some love 'em, some hate 'em...it's saved me reseating a tire on the trail
Food & emergency energy
bag of emergency food - gels, sport chews, etc. for emergency energy & cramp relief - it's literally saved a friend's life on the trail with some emergency pickup chews & gel

worms of various sizes to plug the tubeless tire
emergency tube! presta (french) valve is best as it can be used with any rim! A 26" tube can be used even with a 29" rim in an emergency, no problem! with sealant in the tube. (remember to lightly coat with talc (baby powder) and put strips of nylon bag between the folds to keep it from sticking to itself & ripping in our extreme heat). Keep the tube in a bag - great for emergency to carry out old tube.
spare bag or piece of plastic sheet
biking boo-boo kit from utahmountainbiking.com - excellent assortment of bike-specific bandages (finger, etc.) which are hard to get in small quantities elsewhere.
